How old were you when you started at Extraction?
When I first started my school based traineeship I was 16.

Do you remember your first day?
My first day was a Saturday, I was so nervous. As soon as I walked in one of the chefs hugged me and said it was nice to see me again, I was so confused as I had never seen him before… I later realised he had mistaken me for Lily, everyone thought it was hilarious. Although I was nervous, this interaction made me feel at ease and immediately part of the team.

What is your current role at Extraction?
My current role is front of house team member, where I do a range of things, from dishes, to maître d’.


How does our mission of Reaching out to Humanity influence your work?
I really value compassion and kindness and I love being able to demonstrate this at work. helping our customers have the best experience possible, makes my day!


What do enjoy most about working in hospitality?
I really love interacting with people, and getting to talk to everyone that comes in. I love hearing everyone’s stories and being part of their day!


When you aren’t working, what brings you joy?
I love creative activities like pottery or art journaling and you will regularly find me in an op shop adding to my handbag collection haha


What’s your favourite item (food or drink) on the Extraction menu?
There are so many things! But I specifically love the scrambled eggs, with avocado, halloumi, and mushrooms. And you’ll rarely see me without an iced long black!

What advice would you give to someone starting out in hospitality?
Always be open to feedback and actively ask for tips and tricks on how to improve! A little suggestion can go a long way, and remember to can only do the best that you can do!


What’s been the most valuable lesson you've learned since working at Extraction?
The most valuable lesson I’ve learned is that it’s ok to ask questions and clarify things when you are unsure, because at the end of the day, your team wants you to succeed and do your job to the best of your abilities!

How have you changed since working at Extraction?
I’ve changed a lot! My confidence has grown enormously and I’ve learnt not to sweat the small stuff… for the most part.
